Black Bean Fiesta Burgers

I woke up this morning with a bad sore throat. Perhaps that's why I was in dire need of a nap last night around 7pm? So, I stayed home today to rest up. I'm not very good at resting, but today I did a decent job of laying low, reading, watching the Grey's Anatomy finale (holy intense!) and trying not to do anything strenuous.

Tonight, I was set on making something new for dinna. I settled on black bean fiesta burgers! I used a few different recipes to make mine.

In the mix:
1 can rinsed black beans
1/2 can corn
1/4 chopped onion
2 cloves garlic
1/4 red and green bell pepper
1 egg white
1/4 c dried bread crumbs (1 piece dry bread)
1/4 c or less of shredded cheese
chili powder
garlic powder
salt and pepper

First cook the onions in some olive oil for 5 min, then add the rest to cook for a few more minutes.

Let things cool a bit and transfer it all to a bowl. Here you'll add the egg white or whole egg and the shredded cheese and mix well.

Next, squish the patties together and place them on a greased pan to cook for 4-5 min per side.

Then put them on a cookie sheet and bake at 350 for 10-15 min for a crisper black bean fiesta burger! And add some sliced sweet potato for your side.

We had ours on Oroweat whole wheat buns w/ tomato, avocado, more cheese, mustard and ketchup inside. This burger has great flavor and packs a punch of protein. It would also be great on top of a bed of rice or lettuce.

This was fun new recipe to try. I'm currently watching The Bachelorette and some of these guys seem ridiculously cheesey. Did anyone else watch it? I just hope Ali doesn't get charmed by one of the duds. Okay, this sickie needs her rest. Off to bed!

YUM! Those look so colorful and full of veggies :) Not gonna lie, I made BB burgers the other night and they did Not turn out so well. I think I "smashed" them a little too much, it was a little different to create "patties". Heh, oops. I'll use THIS recipe next time.

I'm about to do something similar to my crockpot full of black bens. I cooked them for last night, but after a strenuous day at work I opted for pizza at a nearby bar with the basketball game on!

Those look really, really good. I love non-traditional burgers like that.

This receipe is a god-send! I'm having some friends over for dinner tonight who are vegetarians and I've been searching and searching for a good main dish to make. This looks just perfect!
Just be careful not to put too much corn in the mix. Mine seemed a bit crumbly w/ the amount of corn I put in it. But who knows, perhaps just making this with beans and not using a food processor may be the reason for that.

I also have a "southwest pumpkin burger" recipe I'd like to make sometime. Unfortunately, last night I realized the canned pumpkin i had was spiced for a pie so it wouldn't have been right for the recipe I have.

Gracie-sometimes pizza at the bar is exactly what the Dr. ordered. In fact, I told the manfriend that we need to have regular pizza and movie nights (partially for relaxation factor and partially just so i don't have to cook).

Holy crap those look good!!! I'll have to try those! I wonder how they hold up on the grill?
Run Jess- On the grill, I would suggest putting them on foil as they fall apart pretty easy. Might stay together more if you mashed the beans in a food processor or added more egg whites??

I mushed the beans up a bit with a fork prior to throwing them in the pan. My patties held up pretty darn well.
