Chili Verde and Fridge Photos

For Cinco de Mayo, I ran home at lunch to throw my groceries in the crock pot. Okay, there may have been a little chopping, can opening and measuring...Anywho, I made Iowa Eats Girl's chili verde.

Basically, you throw in some chicken, 1/2 an onion, 2 cloves of garlic, a little corn, 2 c chicken stock, jalepeno, 1 can diced chilis, green tobasco, salt & peppa, 1/4 c milk, 1 T corn meal and voila!

The recipe calls for a stove top preparation (rather than a crock pot), but I wanted to try it out. I think it made the chili less spicy than it was the last time I tried this pot o goodness on the stove. And a healthy dose of sour cream on top is highly recommended.

It's perfectly fine to use Christmas inspired muffin papers...

The corn muffins didn't quite meet my expectations. They needed a little sweetness in my opinion.

I'm not sure if it has something to do with the fact that Bob's Red Mill was trying to keep them gluten free or what. Usually, I love their products!

I did discover, however, that with slab of strawberry jam they're just fabulous.

Did anyone else celebrate Cinco with a fun recipe or drinks?? I've said it before and I'll say it again, this weather is just too cold. My morning dog run/walk was so cold today. My fingers were like ice bricks after 10 min. Summer, I'm ready for you to arrive anytime since Spring and I aren't getting along too well.

Yum, I am all about soups & stews so I need to try out that recipe.

We had a Cinco de Mayo potluck at work yesterday so I made guac. It didn't turn out as good as usual. The avocados were disappointing! Oh well!

It's been cooler here lately. My run yesterday was quite fridig. I was the only one in the group that wore a t-shirt & shorts! Everyone else was in long sleeves/pants. So I was a bit chilled! I always feel like I dress too warmly so yesterday I figured I'd put up w/ being freezing for the first mile... I probably would not have gotten too warm had I worn long sleeves, but oh well.
